Cool As A Cucumber

With gardens producing like crazy now, you may need a recipe to use up some of those cucumbers, try this one...DELICIOUS!!!!

Cucumber Salad

8 oz Small Penne Pasta
1 Tbsp Veg Oil
2 medium cucumbers-sliced thin
1 medium onion-sliced thin
3/4 c sugar
3/4 c white vinegar
1 c water
1 Tbsp prepared mustard (I used Gulden's Spicy Brown)
1 Tbsp dried parsley
1 Tsp salt
1 Tsp black pepper
1/2 Tsp garlic powder

Cook & drain pasta.
Place in a large bowl.
Stir in oil, cucs & onion
Combine remaining ingredients
Pour mixture over & toss
Cover and chill for 3-4 hours or overnight before serving.

Given to me by a good friend (in fact, she brought it to one of our cookouts as a surprise), this Pasta Cucumber Salad is so refreshing on a warm summer day.
