Cranberry, Coconut Oatmeal Cookies
Several readers have asked me for a few of the cookie recipes I use. One of my favorites:
MISSION INN CRANBERRY, COCONUT OATMEAL COOKIES
1 c butter, softened
1 c firmly packed brown sugar
1/2 c granulated sugar
2 eggs
1 tsp vanilla
Beat together butter and sugars until creamy. Add eggs and vanilla. Beat well.
1 1/2 c all purpose flour
1 tsp baking soda
1-2 Tbsp ground cinnamon
Dash of nutmeg
1/2 tsp salt (optional)
1/2 c raisins
1 c dried cranberries
1 c flaked coconut
1 c chopped nuts
3 c Quaker Oats, uncooked (quick or old-fashioned)
In a separate bowl combine all ingredients, EXCEPT OATMEAL, and toss together with wooden spoon so cranberries, raisins, nuts and coconut are not clustered together.
Add above and oatmeal to creamed mixture and stir with wooden spoon until thoroughly blended. Do not over stir.
Drop by rounded tablespoons onto UNGREASED cookie sheets.
Bake 10-15 minutes or until golden brown. Cool one minute on cookie sheet and then transfer to wire cooling rack.
Makes four dozen.
